Pastrami Pizza Flatbread

Wherever I travel, I always include a stop in the local grocery store. Wandering up and down the aisles and inspecting the variety of kosher products not necessarily available at home, is as enlightening as it is exciting. (I’m a cheap date). Last week while visiting Detroit, Saturday evening’s entertainment was a trip to Trader Joe’s, America’s favorite grocery store. Trader Joe’s is a foodie paradise. But it’s also a kosher foodie paradise, a place where many of the Trader Joe’s branded products are certified kosher.

Pastrami Pizza Flatbread

At the end of a very gratifying hour under my daughter-in-law’s watchful tutelage, my shopping cart held necessities (?!) that included smoky bbq coconut aminos, dark chocolate peanut butter cups, and artisan flatbread. This pastrami pizza flatbread recipe made by my daughter-in-law is a variation of everyone’s favorite, deli roll. Savory and smoky, with a little sweetness from the barbecue sauce, this pastrami pizza flatbread can be served as an appetizer or side dish. Don’t limit yourself to using pastrami. This recipe can be made using a variety of delicatessen meats. Trader Joe’s does not operate in Canada but artisan flatbreads are available everywhere. Now does anyone have a recipe that calls for bbq coconut aminos?

Assemble your ingredients. It’s not a very big list. Preheat the oven to 400 F. and line a a baking sheet with parchment paper. Chop the onion into a 1/4-inch dice. Slice or dice the pastrami or whatever mix of delicatessen meat you prefer. (I buy chunks of deli meat and dice it. If using packaged slices of pastrami, slice the meat.) For this recipe I used pastrami, smoked turkey and salami. Add the olive oil to a preheated frying pan and sauté the onion over medium heat  until lightly golden. This will take five minutes or less. Add the delicatessen meat to the skillet and continue to cook an additional three minutes. Remove the pan from the heat.

Place the flatbread on the prepared baking sheet. Spread the barbecue sauce over the flatbread. Top with the deli onion mixture. Bake the flatbread for 15-20 minutes, uncovered. 

Drizzle the pastrami pizza with spicy mayo sauce and top with shredded arugula or spring mix. Allow the pastrami pizza flatbread to cool for five minutes before slicing.

Ingredients

  • Pizza
  • 1 pre-baked pizza crust or flat bread
  • 2 tablespoons olive oil
  • 1 Spanish onion, diced into 1/4 inch pieces
  • 10 ounces pastrami or assorted delicatessen meats, sliced or diced
  • 3 tablespoons prepared barbecue sauce
  • Spicy Mayo Sauce
  • 1/2 cup mayonnaise
  • 2 teaspoons Sriracha sauce
  • 1/2 tablespoon honey
  • Garnish
  • 1/2 cup arugula or spring mix greens, cut in chiffonade

Delicious eaten warm or at room temperature.

    Sounds delicious especially if you leave out that green stuff called arugula or spring mix.
