I watched as my grandsons’ faces lit up when I brought a platter of hush puppy deli roll pinwheels to the table. Distinguished by the nutritional triumvirate of salt, fat and potatoes, dear to the heart of every teenage boy, this dish disappeared in seconds. It’s been a while since our grandsons have graced our table but it doesn’t mean that this recipe is sitting around gathering dust. Surprise, it seems that these all important food groups are beloved by people of all ages, including a couple of bifocal-adorned, greying baby boomers. Hush Puppy Deli Roll Pinwheels
Hush puppy deli roll pinwheels, comprised of smoky hot dogs, creamy mashed potatoes, turkey and pastrami, held snugly in place by a thin, crisp layer of puff pastry, are bite-sized morsels that can be served as an hors d’oeuvre or side dish. These little mouthfuls have all the flavor of a traditional full-sized deli roll but because they are minis, there is no slicing or watching your beautiful deli roll fall apart as you serve it and they are crispy throughout. Preparing this treat is an all-win situation. There are no fancy ingredients. You can gather everything that you need for 60-80 pinwheels in a single trip to the grocery store. They can be assembled until they are ready to bake and frozen until you need them. And it will probably take you less time to make these pinwheels than it did to read this post.
Assemble your ingredients. Peel, cube and place potatoes in a medium sized pot. Cover with water that has been salted and bring to a boil over medium heat. Allow the potatoes to boil until tender. Drain the potato water and reserve 1/2 cup. Return the potatoes to the pot and mash. Add back potato water as necessary to enhance the creamy texture of the potatoes.
Roll out one of the dough squares between a folded sheet of parchment paper until it is the length of a hot dog. (Ensure that the dough is cold for it to roll out easily without sticking or tearing.) Layer the puff pastry dough with a piece of pastrami. Place a slice (or two) of smoked turkey on top. Spread with a thin layer of mashed potatoes. Place a hot dog about one inch from the edge, flip up the edge of pastry closest to the hot dog, press and roll tightly to form a log. Repeat with the remaining pastry squares, deli, mashed potatoes and hot dogs. Cover each roll with plastic wrap and freeze for 30 minutes. This helps the hush puppies keep their shape when slicing.
Preheat the oven to 350 F. and line a baking sheet with parchment paper. Remove as many hush puppy rolls as you would like to bake, from the freezer. After 30 minutes I did not find that they froze but they did slice easily and neatly. Cut each roll in half and then slice each half into thirds. Lay each slice cut-side down on the prepared baking sheet. Brush the tops of the pinwheel with duck sauce. Bake for 35-40 minutes. The dough should be golden when they are done. Serve with more duck sauce on the side if desired, or mustard.

Hot dogs, mashed potatoes, pastrami and turkey wrapped snugly in flaky puff pastry.
Ingredients
- 10 large puff-pastry squares (1 12 oz./340 g. package)
- 6 ounces (170 g.) pastrami
- 6 ounces (170 g.) smoked turkey
- 3 cups mashed potatoes (from 3 medium potatoes)
- 10 hot dogs
- For finishing before baking
- 1/2 cup duck sauce for glazing pinwheels before baking
